Salmon Fillets with Honey Mustard Glaze



1 tablespoon butter, melted
2 tablespoons orange juice
1 1/2 tablespoons honey
1 teaspoon mustard
1 teaspoon dried tarragon
salt and pepper to taste
2 tablespoons olive oil
4 salmon fillets

Preheat oven to 180oC. Mix the first 6 ingredients together in a small bowl. Heat the olive oil in a skillet over medium-high heat. Add salmon fillets, skin side down. Sear for about 4 minutes. Brush the top of the fillets with the glaze. Place in oven and bake until done, about 5 minutes.
Serve immediately, spooning extra glaze over top if desired.
