Fish and Vegetable Pie
A couple of potatoes, I used 3 large ones, but you can adjust to how much potato you want.
Boil these until mashable, add a little butter and milk and mash. Set aside.
1 onion, finely chopped
2 or 3 garlic cloves, chopped finely
1 stalk of celery
100g pumpkin, chopped into small cubes
3 leaves of silverbeet/spinach, sliced finely
1 cup frozen mixed vegetables
fish fillets (i used 250gms, but you can use as much as you'd like)
Heat a little oil in a pan, add the onion and garlic, cook until clear. Add fish, cook for a few minutes, then add pumpkin and silverbeet/spinach, cook until fish is almost cooked.
Place in a large casserole dish, add frozen vegetables, and mix to combine.
Make a basic white sauce (1 tablespoon butter, melted in a pot, add 1 tablespoon flour, add a little milk until thickened, add more to get the amount you need, for this recipe you need to use about a cup of milk)
Add white sauce to fish and vegetables, mix to combine, then spoon mashed potato on the top. Top with grated cheese, breadcrumbs and chopped parsley, and cracked pepper.
Cook at about 180oC for about 30 mins.
