About 400g white fish fillets
3 slices of bacon
Half an onion, finely chopped
2 stalks celery, finely chopped
1 teaspoon chicken stock powder
2c boiling water
2 medium potatoes, diced
1 teaspoon salt
Pepper to taste
1 c evaporated milk
1 c milk
Add shrimp, prawns, mussels, scallops, etc as desired.
Cut fish fillets into cubes. Dice bacon, and fry in saucepan until crisp and brown. Remove bacon and reserve. Saute onion and celery in bacon fat until tender, but not browned (approx. 5 minutes). Dissolve stock in water, and add to vegetables.
Put into a saucepan, and add potatoes, and seasonings.
Cover and simmer until potatoes are tender (about 10 minutes). Add fish and other seafood, and simmer about 5-10 minutes. Add both sorts of milk, and heat gently to blend flavours, but do not boil, as it may curdle.
Taste and adjust seasoning if necessary.
